Ingredients
- 100gm dried hawthorn (seedless)
- 200gm kumquat fruit
- 8-10 pickled salted plum (remove seed)
- 600gm organic jaggery sugar
- 6 cups water
Cooking Method
- Clean and rinse the dried hawthorn and soak it for at least 2 hours with water. If you cannot find the seedless type, then remove the seed, the hard tip of the hawthorn.
- Cut the kumquat into 2 and remove the seed.
- Pour 6 cups of water in a big cooking pot and add the washed cleaned hawthorn to boil. Add the kumquat, salted plum to boil on medium fire for 20-25minutes.
- Add in the organic jaggery sugar and keep stirring it and ensure to check on the fire is not too big. Keep boiling on medium fire till the fruit is soft and the sauce is getting thicker for about another 30 minutes.
- Turn off the fire and let it cool for about 12 hours at least. Do not cover the pot totally as it will cause vapour to drop to the sauce.
- Put the sauce into a blender and blend it till it is all smooth.
- Store in clean glass jar container and store in the fridge to be used for your yee sang.
