My grandchildren’s favourite!
Ingredients
- 275gm butter
- 220gm organic brown sugar (grind to fine)
- 4 large eggs
- 1 tablespoon milk
- 1 teaspoon vanilla essence
- 250gm organic plain flour
- ½ teaspoon aluminium free baking powder
- ½ teaspoon organic sodium bicarbonate
- 1 tablespoon organic cacao powder
- 1 tablespoon organic cacao nibs
Method
- Sift together:
- 250gm organic plain flour
- ½ teaspoon aluminium free baking powder
- ½ teaspoon organic sodium bicarbonate
- Beat butter and brown sugar until light and creamy. Beat in whole egg one at a time until well combined.
- Fold in the sifted dry ingredients and add in milk and vanilla essence.
- Take a small bowl of the mixture and stir in the cacao powder till it is all well mixed.
- On the cupcake baking tray, place the paper cupcake cup and then put in 2 tablespoons of the butter cake mixture and on top put in a tablespoon of the cacao creamy mixture. Use a thin metal cake tester or a thin bamboo skewer stick and stir the mixture lightly. You will get the marble effect with the baking.
- Sprinkle the cacao nibs on the top.
- Turn the oven to 170F. Bake the cupcakes for 20minutes. Bake about 18 cupcakes.
