Recipe Share – Easy and Nutritious Vegetable Broth

This broth is so nutritious as it has all the nutrients and minerals from all types of vegetable that you can use to make this broth.

I would usually prepare this broth in advance and there are many ways to use it. It can be a soup base for mixed vegetable soup; a soup base to stir fry noodles and simply a broth to drink when you are not well while you still need the minerals and nutrients to increase your immune level and most important it is gluten free.

Ingredients

You can use a mix of any vegetables that you can find from the refrigerator.

Vegetables that I have used – carrots, beetroot, winter melon, jicama, white radish, cabbage and also a whole white onion.

Spices to add:

  • Organic cardamon pod 6pcs – 8pcs
  • Organic clove whole 4 buds
  • Organic bay leaf 4 – 5 leaves
  • Organic black peppercorn 6 – 8 pcs
  • Dried ginger slice 2 slices

Cooking Method

  1. Cut these vegetables of your choice in chunks and put into an instant pot, fill it with filtered water and then boil it with the spices added.
  2. Set the pot to pressure cook for 40mins to get this veggie broth ready to use. Once the pressure has been released, you can drink this broth or use it to cook for your other vegetarian dishes.
  3. If you do not own a pressure pot – just boil the pot of veggies with the spices for 2.5-3hours over the gas stove on very small fire to simmer. You will also get the same quality of the broth. Sieve the soup and it is ready to drink.
